I am Ale. And I love cooking. My best is Italian, but I love to cook all Mediterranean cuisines.
I grew up in a family where we would make our own pastas, our own salsas, our own pickles, our own marmalades, following secular family recipes.
I started cooking when I was a small child, with my mum and my grandmother, tradition that still goes on nowadays with my son, with extreme pride and joy.
My number one priority is to be able to create dishes that are tasty, but in the same time healthy and respecting the seasonality and territory of the ingredients.
I always buy and work with the best raw material possible in Ibiza, from the local market, where I shop since more than 20 years.
I strongly believe that at the base of a healthy, long life, we need the right nutrition, this is why I only use the best ingredients and most delicate cooking methods to avoid waste of vitamins and to preserve the integrity of our fresh local veggies, balearic fishes and best grown meats.
I want my clients to enjoy the finest food possible, taking advantage of my 20 years of research, focused on cooking the best dishes, matching tradition, mediterranean culture and innovation.
