Creative spins on classic dishes

I have been cooking my whole life, I spent my late 20’s cooking for professional athletes, this led me to pursue cooking professionally. I have cooked through Central America, living in Costa Rica and Panama. I have been based in Vail the past few years, taking a year hiatus to Chicago to work in some Michelin starred restaurants & gain experience working for some incredible chefs. I spend time with The Alinea Group, working under Chef Grant Achatz at The Aviary & NEXT kitchens, I also worked under Top Chef Season 14 Champion Chef Joe Flamm at Michelin starred Spiaggia. During my year spent in Chicago, I also worked different events with chefs such as Stephanie Izard, Rick Bayless, Paul Kahan, Jaimie Bissonette & Akira Back. I am looking to take the experiences I have gained as a restaurant chef & put them to work cooking on a smaller scale for individuals as I prepare to open my own restaurant.
