Italian, Fish, Mediterranean, "Mountain" food are my best.
I'm more available during winter time, i love snow & mountain.
I also love Mediterranean sea during summer time, but I'm quite busy with my catering company in Ibiza during this season.
I don't really like to work in "dirty" places. I really appreciate order, respect and smiling. Cheffing doesn't mean slaving.
Italian is my mother tongue, i'm fluent in English and Spanish; i quite understand French but I don't speak very well.

I learned to cook at 10 years old with my grandmother. I dreamt to be a chef and teacher when I was 14. I realized, only at 40 years old, to do both.

My secrets: max 4-5 ingredients per recipe; (not always) cook separate and merge after; quality is not always expensive; use what the nature gives.
