30 years of experience in the best restaurants in the Country and overseas.
I’ve worked in professional kitchens for 30 odd years, starting in Battery point then Hobart, the Margaret river region, internationally and then to Queensland where I have owned and operated many restaurants, hotels and cafes.
A few of the best memories for me, have been when Queen Elizabeth traveled up the Brisbane River on board our motor cruiser and also some of the hundreds of international artists we have cooked for over the years at the Tivoli Theatre such as Bob Dylan, Oasis, Guns and Roses, and so many more.
Perhaps the most important thing that differentiates me from a lot of other chefs is that we love a left-field request or a bespoke menu! We don’t believe that events are generic and so neither should the food be.
I have extensive experience cooking in Super-Yachts, and in the catering world in general, I use only the freshest ingredients available.
