Passionate about travelling and cooking. Have been to 36 countries and will do an around the world tour on e-bike in 2025. Love Latin Asia food. Nikki
I went to Culinary school in New York City back in 2004, after that I went to travel to south east Asia (Thailand, Laos, Vietnam and Cambodia) and took cooking clases. Back in Colombia I opened a Latin Asian Bistro called Darpapaya that still operates in Armenia Colombia with new owners. I also created a small restaurant chain called Conosur with 6 restaurants in Bogota and Chia a neighbour town. My favourite cuisine in the world is Peruvian because they got the Japanese (Nikkei) and Chinese (Chifa) cuisines that developed with the arrival of immigrants from these nations. I also love to eat ceviche and cook it every single week. My former chain of restaurants used to serve Temakis ( Hand rolled sushi) , Plantain cones with latin fillings and rice crispy cones with ice cream.
I love raw foods like tartars and oysters and simple believe that Latin and Asian cooking are the best fro my palate.
