I have an eternal curiosity for all things edible. I am passionate about celebrating and fusing local flavors and cooking methods with a unique, modern approach. I believe that a dish should not be over-complicated - by choosing the highest quality ingredients, the natural flavors and textures burst through. Where possible, I grow, forage, and catch my own ingredients, or source from farm-to-fork. Having discovered the stove at an early age in the kitchens of my Italian neighbors in Philadelphia, I saw how food brings people together. Being a good chef comes from your heart, and I have a genuine passion for creating great guest experiences. Together with my wife, I am co-owner of tHE BUtCHERY in Anguilla - a fine meat and provisioning store operating out of one of the island's oldest buildings. We also run ChefCaribbean, a private chef company dedicated to bringing great food to good people.
