Chef Antonio Muniz started his career in sushi in 2005, and is currently head sushichef at Vila Vita Parc and Resorts, working in Four Seasons Hotel Ritz Lisbon during 5 years where he was garde manger chef and head sushi chef. He began in a small restaurant in Cascais, where he discovered Japanese food to be his passion. Working with fusion sushi, he specialized in marrying oriental and occidental flavours, when, two years later, he joined the team at Aya, one of the biggest sushi references in Portugal, and created all his base of knowledge in traditional Japanese cousine by the hands of the legendary Takashi Yoshitake and perfected the craft he’s been practicing at Four Seasons Hotel Ritz Lisbon and now at Vila Vita as Sushi Chef at Mizu Teppanyaki Restaurant.

Antonio Muniz have a SUSHI PROFICIENCY CERTIFICATE awarded by AJSA (All Japan Sushi Association) and WSSI (World Sushi Skills Institute) and RAMEN CERTIFICATEY by Ishizuka Academy Japanese School .
