Chef At Home in Kumamoto
Started my career in the Czech Republic and moved to the UK at the age of 20 to cut my teeth in London’s West End kitchens, with a focus on continental—mainly French, Italian, Spanish—cuisine. Worked at various establishments in the UK, honing my skills over the course of 5 years, then relocated to Japan in 2008. Spent 8 years as a manager of the Ambassadors Residence at the Embassy of the Kingdom of the Netherlands in Tokyo, where I have organized and oversaw thousands of events with foreign dignitaries and members of royal and imperial families in regular attendance.
After leaving the Embassy, established HBF-Japan, specializing in hospitality business consulting, full service catering, and event planning and management. In 2017, decided to start a new venture in rural Kumamoto after falling in love with the prefecture and its people. The Sausage Fest restaurant was opened in October 2017 surrounded by the mountains of Sakamoto and, despite its remote location, quickly gained a following and recognition for its quality offerings and use of local ingredients. Sausage Fest was also awarded Bib Gourmand in the 2018 Kumamoto/Oita edition of the Michelin Guide.
