He is Chef Azumasong — a Spanish–Japanese Executive Chef with nearly three decades of dedicated experience in high-end gastronomy, having built a solid and respected reputation within international five-star hospitality and premium airline catering systems.
Over the past 27 years, his career has evolved from leading kitchens in luxury five-star hotels to designing First and Business Class inflight Kaiseki menus for leading Japanese airlines. His experience is not decorative — it has been forged and validated in high-performance, high-pressure culinary environments at the highest level.
He received formal training in traditional Edomae-style sushi, the classical Tokyo discipline rooted in precision knife work, fish maturation techniques, rice temperature control, balance, and service sequencing. Every technical element was refined through rigorous repetition under traditional standards. He also holds professional certification from the Ministry of Agriculture, Forestry and Fisheries of Japan (MAFF), officially recognizing his competence in authentic Japanese culinary heritage and technique.
A defining stage of his career was developing traditional Kaiseki cuisine for First and Business Class cabins of five-star Japanese airlines. Within the demanding aviation environment, he successfully translated the multi-course artistry of Kyoto-style Kaiseki into a controlled, reproducible, and scalable production system — maintaining seasonality, aesthetic integrity, and flavor precision while meeting operational constraints at altitude.
