Chef Omar Essabir

I’m a young Spanish chef with Moroccan roots, bringing together the flavours, traditions and warmth of the Mediterranean with a strong passion for fire and slow cooking.

My cooking is rooted in simplicity and good ingredients, but I love giving them time and intensity. I’m especially drawn to open-fire cooking, slow-roasted meats, vegetables cooked over embers, rich sauces and deep, concentrated flavours. Francis Mallmann’s philosophy of cooking with fire is a great inspiration to me.

I also have a strong connection to Italian cuisine. I’ve worked extensively with fresh pasta and Mediterranean cooking, and I previously owned and ran my own restaurant, Burrø, where I developed my own style and learned every side of running a kitchen and creating an experience for guests.

Today, I enjoy bringing that experience into private dining: creating relaxed but memorable meals, cooking in front of guests, adapting menus to the occasion and letting the ingredients speak for themselves.

My food is Mediterranean at heart — Spanish, Moroccan and Italian influences, fire, fresh pasta, slow cooking and bold flavours — but always with a personal touch.

I’m young, curious and constantly looking to improve, discover new ingredients and create something that people remember long after the last plate.
