Admiring traditional plates from all over the world because of the variety of the ingredients. Even though Greek ( and Mediterranean) traditional kitchen is full of vegan and vegetarian dishes, it wasn't easy to enjoy a meal in a restaurant, as they mostly served meat or fish dishes. So, I started cooking every day, inspired as well from foreign kitchens( indian, japanese), trying to create a vegan meal experience, approved by everyone, even hardcore meat eaters. Finally, I studied in a culinary arts school, and I am cooking professionally for five years.
