My Journey:
I am a Gold Seal Certified Chef with over 22 years of Direct Hospitality Experience. I began working in kitchens at 11 years old as a Dishwasher and followed my lifelong passion to become a Chef, travelling from Ireland to Canada in 2006 determined to achieve my dreams.
In 2012, after 6 years of Cook, CDP & Sous Chef Experiences throughout British Columbia, Canada, I then trained at the Pacific Institute of Culinary Arts in Vancouver and succeeded to achieve my Culinary Arts Diploma, Hospitality Management Certification, Won a Maitre D’ Award for Outstanding Customer Service & Acquired my WSET Level 2.
I have worked in all kitchen positions, from Dishwasher to Executive Head Chef, so I have comprehensive knowledge and deep understanding of all kitchen and Hospitality Operations due to my extensive experience and training.
In 2019, I opened my 1st Catering Company (Edward Malone Catering) to start my entrepreneurial journey. Inspired by the need for sustainable food, a year later, I travelled to Toronto from Vancouver in 2020 during the COVID-19 Pandemic and opened an Organic Vegan Restaurant (True Flavours) to combat the high rising cost of food and to showcase my dedication to innovation through Food & Sustainability.
In 2021, after the COVID-19 Lockdown, I left Canada to travel back towards Europe after 15 years abroad and began working as a Head Chef in Stockholm, Sweden. This experience gifted me valuable insight into new hospitality practices and food culture, giving me to continuing opportunity to grow as a Chef.
In 2022, I decided it was time to finally go home to Ireland after many years away, and to continue my growth within the Irish Hospitality Industry, where I originally started my journey.
Upon my return to Dublin, I worked in a large Conference Hotel (Clayton Hotel) as a Sous Chef, serving up to 1,500 people a day via Event & Restaurant services. This was my initial step back into Irish Hospitality but my entrepreneurship continued to grow within me, leading me to open my 3rd Business (Original Flavours Ireland | Green Table) to focus and advance on everything I have learned along my journey. I have thrived on the innovation of “Budget Focused Services”, allowing a new path for Catering & Hospitality Consultation Services.
I am proud of my achievements and look forward to sharing my inspirations and passion for memorable food & hospitality experiences with you.
