With over 20 years of experience as a chef, I’ve cooked for private guests on many occasions and honed my craft in kitchens around the world. Along the way, I’ve explored countless flavours, textures, and cooking techniques — bringing them together on the plate in menus that tell a story.
My heart, however, is here in Ireland. I’m passionate about showcasing the very best this country has to offer — from its exceptional meats and dairy to the delicious vegetables grown by skilled local hands.
