I spent sixteen years in hotel kitchens across 6 countries before bringing that experience into people's homes most recently at Marriott Powerscourt, where I was a Head chef focusing an luxury dining option.

That background shapes how I cook for private dining: seasonal, technique, driven food, but built for a table of six or eight rather than a hundred and fifty covers. I shop, cook, plate, and clean up, so the only thing you and your guests need to do is sit down.

Pastry and bakery is where I trained, so dessert isn't an afterthought on my menus it's often the course people remember most.
