We’re Chef Derek Ronspies and Designer–Hotelier Cat Biggar—the duo behind Black Goat Test Kitchen + Supperclub. Together, we create immersive dining experiences that blend bold, chef-driven menus with thoughtful design, storytelling, and hospitality.

About Derek

A classically trained chef with 30+ years in the kitchen, Derek’s roots stretch from Seattle’s fine dining scene to Daniel Boulud’s Michelin-starred team in Palm Beach. He went on to open his own award-winning restaurants (including being named one of USA Today’s Top 45 Restaurants of 2024) before launching Black Goat. His specialties include whole-animal butchery, charcuterie, and inventive tasting menus that celebrate seasonal, sustainable sourcing.

Cat brings her background as a designer and hotelier to the table—curating the look, feel, and flow of each dining experience. Together, we transform meals into unforgettable gatherings where food, design, and connection collide.

Chef Derek did an incredible job for my husband’s big birthday. He did a surprise menu for us but asked a lot of questions about what we liked and didn’t like, as well as preferences for kids. The meal was excellent - from the inventive oyster, charred pineapple, seared tuna and grilled pork. So many different flavors and textures that all came together very well. He is also a very nice guy and brought along music too. We enjoyed our humorous banter. He did all of that on a houseboat without a kitchen, only a grill and no stove. We highly recommend Chef Derek.
