Italian chef and restaurateur creating authentic, refined dining experiences rooted in tradition, seasonality and modern technique.
I am an Italian chef and restaurateur from Southern Italy, raised in a family of farmers and winemakers. My culinary journey began with the traditional cuisine of Basilicata and continued in my uncle’s Piedmontese steakhouse in Turin, where I learned the importance of quality ingredients, fire, precision and consistency.
After ten years in the Italian Army, I moved to Manila and built my career in the food and beverage industry. I am the founder of Al Dente Food Group and the creator of Al Dente Fresh Pasta Bar and Moderna.
My cuisine combines authentic Italian traditions with modern techniques and carefully selected local and imported ingredients. I specialize in fresh handmade pasta, meat, truffles, Italian regional dishes and personalized tasting menus. As a private chef, my goal is to create a complete and memorable experience tailored to each guest, occasion and setting.
