I'm into cooking with local products, hand foraged herbs and fruits and natural wines
I worked in a lot of different restaurants during my 6 years career in Dublin, London, Amsterdam and in Italy. The experiences that stuck with me the most though are my first job in a kitchen when I was 20 in Italy in a restaurant on the Liguria coast on the beach, my year at brat in London when we very rapidly gained the michelin star after a few months from opening and my latest experience at Public Space in Amsterdam as a head chef.
