Michelin Star Restaurant Training and Worldwide Experienced Chef
Food has always been my passion.
In Mexico, eating is a ritual of togetherness and from a very young age, my Grandmother taught me the skill of cooking and the art of feeding people.
I developed this relationship with food further through classical training and Michelin-starred restaurants across the world, gathering experiences and influences which shape a unique experience for my guests.
From working with Wylie Dufresne in New York I learned the art of deconstructing traditional dishes, distilling the elements to reinvent the dining experience by encouraging the diner fully experience the flavours and challenge their perception of reality. In the Netherlands, my time at the three Michelin-starred De Librije taught me to truly appreciate the beauty in simplicity by using only premium ingredients and designing the menu to complement each season. I also spent time on cruise ships, finessing the art of efficient execution of fine dining principles.
More recently, I have curated dining experiences in New Zealand. This includes an homage to New Zealand in an innovative dining experience for the Prime Minister and guests, intimate private affairs, as well as hosting experiences for VIPs associated with the America’s Cup. My food celebrates my
Incorporating my roots of Mexican, Spanish and Italian cuisine in innovative ways, it is constantly evolving with each experience to provide unique and exquisite dining experiences.
