Almost everything you are paying for happens once, regardless of how many people sit down. The chef travels to you once. They shop once. They plan one menu and set up one kitchen. Only the ingredients actually scale with the headcount.

So a dinner for two is the most expensive way per head to book a private sushi chef, and a party of twelve the cheapest. If you are weighing up numbers, adding guests is usually the single biggest lever you have.

How far in advance should I book?

Three to five days is normally enough for the chef to source the fish and agree a menu with you. For Friday and Saturday evenings, holiday weeks and groups over eight, allow one to two weeks: the chefs who cook Japanese menus are a smaller pool than our general roster.
