My career started at the age of 20 as a dishwasher in a small restaurant in my hometown in Sardinia. Before my career took off, I gained valuable experience around hotels in Italy and Europe, until I became an Executive Chef in 5 * Hotels around the world.

I remember at home I used to watch my mother cooking with fresh ingredients brought in from my father’s farm. With the passing of the years I consider myself a creative self-taught individual. With my passion for different culinary cultures, I brought authentic Italian flavors to the Hotel’s fine-dining-menus around Asia, Middle East, Australia and South America.

When I create a dish or I’m writing a menu, I look for quality local and seasonal products. I like to challenge myself every day with my own unique mantra: “The more passionate the cook, the better the flavors”.

I really enjoyed my experience as I was hosting a pool party, the food was great.

Chef Mauro made our valentine's dinner one we will truly remember forever. From the moment he entered our home, he was warm and smiley and the made it a great experience. He is attentive, punctual, engaging and very professional. He prepared a great dinner with an amazing setup in our backyard. The dishes were presented in an incredible manner and were truly delicious. The storytelling behind the dishes were on point and the flower/candle setup were superb. He even went the extra mile on printing the menu, cleaning the kitchen and leaving leftover uncooked food in our fridge. This was an incredible experience and one we will definitely repeat. Thank you, Chef Mauro. My wife and I are very grateful.
