I build balancing flavours, textures, temperatures, timing, and guest experience into a single plate.

My route into cooking wasn't conventional. I started at the very bottom of the kitchen hierarchy and worked my way through professional brigades to Chef de Partie, learning every layer of the operation along the way. That progression taught me that great food is rarely about complexity… it’s about control.

My experience spans Spanish fine dining, modern European cuisine, Japanese cookery, and contemporary Indian kitchens, giving me a broad technical foundation rather than a single culinary identity. I've worked with everything from hand-dived scallops and Carabineros prawns to delicate plated desserts, refining the discipline and precision expected in Michelin starred restaurants.
