As a chef I have had the privilege to work and live around the world for the past 22 years. 2 Continents 6 Countries 4 Languages (of which I only speak two) hundreds of markets, thousands of new flavors and a whole new community, make me the cook I am today. From Colombia to Brazil, through Peru, Mexico and Guatemala back to The United States and across the world to Thailand I have been making memories with flavors, and this is how I tell my story
I am a visionary, where you see a red apple, I see a perfectly baked, bubbly caramelized apple pie. I think in flavors, textures and shapes. I understand how food behaves under certain temperature learned the chemistry and reaction of food just to be able to play my symphonies without the whole pentagram.
