My name is: Adnel A Abreu Veliz, I’m an Executive Chef I believe my education and employment background is appropriate for this position. I have more than 18 years in the culinary field and the following qualifications:
Extensive knowledge of menu development with knowledge of food products, menu engineering and proper preparation thorough knowledge of hot and cold food preparation.
Ensured the consistency in the preparation of all food items a la carte and buffet menus according to hotel recipes and standards for more than 500 pax. Maintained hygiene practices(HACCP)
Ensured proper receiving, storages ( including temperature setting) and rotation of food products.
Assisted with the training, development and scheduling of the culinary associate, maintained update and accurate costing and documentation of all dishes prepared and sold in the food and beverage operations.
