Born in Portugal, Madeira Island, Herculano developed since early age an outstanding passion for nutrition, curiosity about the chemical processes behind cooking,quality of food and a great sense of taste and consistency. Nature is his inspiration. As an ambitious and full of energy,adventurous and outgoing, persistent and humble chef; he decidedto take an anthropological approachin the study of different cultures and their food, working patiently and growing through the levels of the professional kitchen hierarchy over the last 10 years in countries such as Italy, Madeira, Anguilla, Saint Lucia.
