I mix tradition with haute cuisine
I grew up in Portoviejo, Manabi, one of the most influencial cities within gastronomy in Ecuador. I've been working in several restaurants and hotels in Ecuador, Peru, Brazil and Belgium. In the food I make i always try to preserve the traditional gastronomy and mix it with all the techniques I had learned.
My last project was Shungo Solitario, a restaurant with a from neighborhood to table concept, where our main idea was to help the small businesses in our neighborhood La Tola in Quito, Ecuador.
