I am a creative chef, but always enjoy making an authentic food.
I’m a professional chef with 25 years of experience working in Bali and abroad — including Dubai, Singapore, Bangkok, Japan, Brunei and Australia. I’m deeply familiar with Indonesian and Balinese cuisine, and I also specialize in Italian and Mediterranean cooking. I draw on a broad range of influences (Thai, Chinese, Indian and Mexican) to add variety and depth to my menus and to create balanced, flavorful dishes.
I currently run my own operation, Chef Nyoman’s Kitchen, where I oversee food production and produce small-batch kombucha. My approach blends traditional techniques with contemporary flavors, always focusing on high-quality ingredients and thoughtful, memorable presentations.
