I’m deeply familiar with Indonesian and Balinese cuisine, and I also specialize in Italian and Mediterranean cooking. I draw on a broad range of influences (Thai, Chinese, Indian and Mexican) to add variety and depth to my menus and to create balanced, flavorful dishes.

I currently run my own operation, Chef Nyoman’s Kitchen, where I oversee food production and produce small-batch kombucha. My approach blends traditional techniques with contemporary flavors, always focusing on high-quality ingredients and thoughtful, memorable presentations.

Food was excellent. The chef arrived in good time & was exceptionally clean, tidy & polite. Each dish was explained to us , along with whether it was vegetarian or gluten free. It was all very tasty & served as a course at a time ( which we had specifically requested). Would definitely recommend

Absolutely amazing food and people. Chef Nyoman created not only amazing dinner and breakfast for my family but also a memory tgat will last a life time. His wife and himself created a variety of disges that were of 5 star restaurant qaulity, and designed a menu that cateted for everyone. They were punctual, engaging and had a really nice calm personality. If you want special food for a special memory these are the people to use.

We had a long list of request like chilled chicken not frozen, fresh seafood purchased on same day of the bbq, charcoal bbq not gas, size of the prawns etc etc. I was under alot of pressure to make sure the night was perfect. Chef Nyoman exceeded all our expectations. He was professional - he brought everything he needed, came in his chef’s uniform and apron and even set up the plates and cutleries for us. He came early to set up and prepared the ingredients to cook. More importantly the food was out of this world. The chicken satay was the best I have tried. The chicken was perfectly grilled and cooked. Each dish was served one after another on time. The marination for each dish was on point and yet we could taste the freshness of each dish. The menu was for 5 pax, but he prepared more than enough and can easily feed 7 pax. Everyone had such a good time and experience. Thank you chef for making our dinner so memorable.

Chef Dadi and his sous chef were so lovely and did an amazing job! They just worked so hard and with no fuss to present us an amazing dinner within comfort of our villa. They brought everything and the set up and clean up they did was great! Easy for big groups.

We are from New Zealand and had I Nyoman Tridanayasa come to our villa on Christmas Day, and wow—this was truly one of the most incredible dining experiences we’ve ever had. From the moment they arrived, it felt special. They offered a basic menu, and we were able to pick and mix to suit our tastes and dietary requirements, which was handled so thoughtfully and effortlessly. The food… honestly, jaw-dropping. Watching it being cooked was an experience in itself—we were literally dribbling while it was being prepared. Every dish was bursting with flavour, beautifully presented, and absolutely unforgettable. This was not just a meal, it was a highlight of our trip and the most perfect way to spend Christmas. We cannot recommend I Nyoman Tridanayasa highly enough. if you’re even considering it, do it. You will not regret it.

Our Chef Dadi was very punctual and professional. He and his assistant prepared a wonderful meal for all 8 of us and explained to us what each dish was. It was amazing to try the Indonesian cuisine in the comfort of our villa. The food was delicious. We would recommend Chef Dadi to anyone!!

We really enjoyed the experience with Nyoman. He and his wife were so lovely. The food was great and there was a lot of it! Our only feedback was that we would’ve preferred the food to come out as courses so we had more time to enjoy it, rather than all at one time. We loved the chocolate lava cake and homemade vanilla bean icecream for dessert, cooked to perfection and tasted amazing! Thank you Nyoman and Ming Ming!
