Self-taught and deeply passionate, Simon forged his path from the ground up, opening his own restaurant in the French Alps and building over 20 years of experience across continents. From the turquoise waters of Bora Bora to the bustling markets of Southeast Asia and the rich lands of Madagascar, his travels have shaped a truly global palate.

Simon doesn’t simply cook — he composes. Each plate is a story, a journey, where flavours from distant cultures meet with perfect balance. His signature lies in blending bold spices, subtle textures, and unexpected pairings into dishes that awaken the senses and leave a lasting impression.

For the past 10 years, Simon has worked as a private chef around the world, serving high-net-worth families, curating exclusive menus for prestigious events such as the Cannes Film Festival, and cooking aboard private yachts. His discretion, precision, and creativity make him a sought-after name in bespoke culinary experiences.

Now based in Indonesia, Simon has immersed himself in the archipelago’s rich culinary landscape. Having explored many of its islands, he is able to craft menus that feel like a true journey through Indonesian island cuisine — celebrating local ingredients, regional techniques, and authentic flavours with his signature refinement.

Whether offering a Michelin-level five-course tasting menu or preparing heartfelt family-style meals rooted in tradition, Simon adapts his craft to every setting. His cuisine flows seamlessly from haute gastronomie to rustic authenticity — always generous, deeply personal, and unforgettable.
