Hi! My cooking has always felt like a bit of a tug of war between two worlds. I spent years sharpening my craft through a City & Guilds UK diploma and grinding in Michelin starred kitchens across France and Malaysia. That is where I learned the discipline, the rules, and an obsession with detail and presentation. Yet, at the heart of it, I’m still drawn to the bold, nostalgic flavours I grew up with. The kind of food that’s loud, comforting, and effortlessly brings people to the table.

I don’t cook classics for tradition’s sake. I champion the "uncommon hero" - the humble, overlooked ingredients that high-end kitchens might usually toss aside. I give them the same care and respect I would a perfect cut of Wagyu. I enjoy experimenting, breaking things, and making unconventional pairings work in a way that feels effortless.

For me, flavour is king. A plate can look like art, but if it doesn't taste incredible, it fails. Every garnish and element on my plate has to earn its place. This menu is my story, told through texture, heat, and contrast. It’s an invitation to taste where I’ve been, and glimpse where I’m going, with classical technique as the vessel for a story still unfolding.
