Chef Antonino Gianni ‘Carbone’
Chef Antonino has been in the kitchen since 1990. A self-taught chef from Syracuse, Sicily, he is also a musician and art teacher with a deep passion for plant-based cuisine and culinary culture.
After moving to Florence in the 1980s to study Architecture, life took him on a different path—one that led him from composing music and founding an independent record label to fully embracing his love for cooking.
Over the years, he has worked his way up from the ground level in restaurants across Florence and throughout Europe, gaining extensive experience across a wide range of cuisines: from traditional Italian to vegetarian, macrobiotic, Latin American, Japanese, and broader Asian influences.
For over five years, Chef Antonino has adopted a fully plant-based diet, which has deeply inspired his approach in the kitchen. His creative, colorful dishes are rooted in a passion for culinary fusion. Each plate is the result of decades of hands-on experience and research—an invitation to rediscover the often-overlooked richness of the plant kingdom through new flavors, textures, and interpretations that go beyond the ordinary.
