I'm a cooking enthusiast who enjoy experimenting with flavors and sharing delicious dishes with others.
"Since I was a child I use to be in the kitchen with my mom and my grandma while they were cooking. I loved watching how they prepared the tradicional recipes and listening to they stories they told. I also learned the importance of local products and quality ingredients.
After I finished university, I´ve decided to study kitchen management since it was my true passion. I started my career in Bilbao, one of the leading cities of spanish cuisine. My first step in a kitchen was Azurmendi restaurant (3 michelin stars), where I started as an assistant and I ended up as a chef de partie. Later, in Madrer, I was presented with the opportunity to work at Albora restaurant (1 michelin star), initially as a sous chef and later as a head chef. I participated in the achievement of a Michelin star elaborating detailed menus based in seasonal and Mediterranean products.
My last stage in Madrid I decided explore mexican food at Punto MX and Indiano Madrid DF as a executive chef at last. mexican cuisine and its techniques became my other grate passion and being able to combine with spanish cuisine allowed me to discover a universe of possibilities."
