With over 20 years of experience, José has devoted his life—heart and soul—to the culinary arts. Originally from Mendoza, Argentina, he began his journey at the Arrayanes Institute, where he built a strong technical foundation and developed a deep connection with the flavors of fire and earth.
Driven by a constant desire to grow, José took his passion beyond borders, training in Andorra, Rome, and across various regions of Spain. It was there that he fell in love with Mediterranean cuisine—a tradition that captivated him with its freshness, its deep respect for ingredients, and its ability to evoke emotion through simplicity and authenticity.
Today, from his kitchen in Ibiza, José expresses a unique culinary style: a vibrant fusion of Mediterranean tradition, fire-based cooking—an homage to his roots—and refined influences from Eastern cuisine. His work goes beyond cooking; it's a bridge between cultures, a sensory experience that honors where he comes from while embracing where he's headed.
The result of this journey is Peregrino, his own culinary brand: a service company offering personalized dining experiences for private events, along with consulting and advisory services for culinary ventures. Peregrino is the culmination of a career shaped by passion, craftsmanship, and a clear vision—to share a cuisine that is authentic, technically refined, and deeply emotional.
