With over 15 years of experience, Saúl Cordero is the chef and owner of "Saúl Cocinero", a culinary project that reflects his identity through the exploration of Latin American flavors and a deep respect for local ingredients. His cuisine is the result of a global perspective, shaped by his studies and internships in countries such as Peru, Argentina, Mexico, Italy, and Spain, while remaining firmly rooted in Costa Rican authenticity.
In addition, Saúl is part of a family-run initiative in Quepos, Costa Rica, dedicated to organic farming and the ethical raising of pasture-raised poultry, fed with 100% organic grains, free of hormones and antibiotics. This commitment to sustainability, organic agriculture, and food traceability is reflected in his honest dishes, full of intention and deeply connected to the land.
