Over the past 20 years, I have built a career as a hospitality professional in a senior managerial position at respective resorts. I have attained knowledge, skill, and understanding that have equipped me with a thorough understanding of the industry, its demands, and its competitive nature to be results oriented.

The pursuit of excellence and the madness of perfection has led me to function in some key capacities within the sector namely, Acting Corporate Chef, Executive Chef, Food Safety Consultant, Food and Beverage Director, etc...

Nonetheless, with all the components of an executive managerial role, my love is creating menus and dishes; authentic or otherwise that captivated the palettes of whoever granted me the opportunity. My view of food is holistic, fresh, and artisanal. incomplete and awaits a master crafter. food should be treated with care, respected, simple but thoughtful, complex but easy an experience always worth having! I see food differently.

Chef Fabian was absolutely incredible! Not only was his food some of the best we've ever eaten, but he was a wonderful person, too! We loved talking to him and hearing his background. He was personable, humble and funny. Can't recommend him enough! My partner and I hired him for a birthday and we still can't stop talking about how delicious the food was. We've eaten at Michelin star restaurants that weren't as good - seriously! Best of luck to Chef Fabian, he deserves all the good things!

Our experience with Chef Fabian was better than we could have imagined! From the impressive preparation of the food, to the super cool plating, to the taste - this was an experience worth more than the price! Aside from those things, we enjoyed learning about where the food came from and that farm-to-table is of the utmost importance to him. You could see, feel, and taste his love of his art! Friendly, knowledgeable, and fun. Our kitchen was spotless upon his departure! He is one of the reasons we will visit St. Lucia again - and reserve his time.

Wow, wow, WOW. Chef Fabian and his team were absolutely incredible. We would put this dinner up against any James Beard-nominated chef we’ve dined with. Not to mention, much of what he served was grown on his property! Our only disappointment was not booking him every night we’re here—I’ll be dreaming about those banana nests for years to come!

Chef Fabian was amazing. I had a really hard time finding a chef in St Lucia because the island was on curfew due to covid. He confirmed with me only two days before the meal (1 of those days, the stores were closed because it was an all day shut down) and still was very prepared. He made a 4 course St Lucian style dinner. He explained all the dishes and even found a way to accommodate my friend who doesn't eat fish. I was also very impressed by the fact that he actually baked us a cake for dessert while he was preparing all the other courses! He cleaned everything up afterwards. Very professional and thorough.
