I have worked with talented and renowned chefs in Puerto Rico such as Hector Rosa, Luis Días, Alvaro Sosa, Rene Marichal and internationally in Colombia with chef Alvaro Clavijo at El Chato restaurant in Bogota. El Chato is one of the best 100 restaurants in the world.
In every corner I have learned, and from each one of those chefs Pablon Juan Cotto Orellano was born, passionate about cooking, a chef who loves and enjoys what he does
