With over 26 years of global hospitality experience across Europe and Australia, Craig brings uncompromising discipline and technical precision to everything he touches. Forged in the military-grade rigour of the Gordon Ramsay kitchen ecosystem and sharpened at Dublin's prestigious Marco Pierre White Steakhouse, he mastered classical European technique and high-volume luxury execution.

In Australia,he built his reputation through standout kitchens before being headhunted to lead De Bortoli's acclaimed Yarra Valley estate restaurant and launch Stonewater in Perth. As Lead Consultant at venues including Vrina Mezze Bar, he engineered the systems behind award-winning operations.

In late 2025, he poured a lifetime of craft into Cicchetti Street Food—a pure, uncompromising expression of Venetian street food and regional Italian small plates, now a permanent beachfront eatery in Alexandra Headland.
