Originally from the UK, Emrys began his culinary journey in Europe before moving to Australia, where he went on to lead the kitchens of luxury resorts and award-winning hatted restaurants. His food philosophy is defined by precision, creativity, and respect for the ingredients, celebrating the very best of local and sustainably sourced Australian produce.
Each menu is tailored to the moment—crafted around the people, place, and purpose of the occasion. Whether it’s an intimate tasting menu, a long-table dinner, or a bespoke corporate event, I curate an experience that feels both elegant and personal, with an uncompromising attention to detail and presentation.
Based in Sydney I continue to evolve my craft through collaboration, technique, and a deep commitment to excellence—bringing the finesse of fine dining into the warmth of private hospitality.
