Matteo Zamboni is the former Executive Chef at Jonah’s in Whale Beach, an iconic dining destination on Sydney’s Northern Beaches. Italian-born, Matteo has built a distinguished international career that includes head chef roles at two-hatted Pilu at Freshwater and Ormeggio at The Spit, senior kitchen positions at three-hatted Quay Restaurant (Sydney), and a formative tenure at three-Michelin-star RyuGin in Tokyo.

Rooted in Italian technique and shaped by global fine-dining experience, Matteo’s cooking celebrates pristine seasonal Australian produce with refined, expressive plates. His background blends rigorous classical training with a modern sensibility—resulting in food that is both technically brilliant and warmly generous.
