I'm a professional freelance chef, with a couple of decades experience from around the world- 5 star hotels, amazing restaurants, serving billionaires arriving in helicopters.

Now based in Scotland my menus aim to be local, seasonal, and something to talk about!!

I learned to cook at...

I'm always learning, but I learnt the most at Tuckers Point in Bermuda, in restaurants on the Scottish and Cornish west coasts, and in rural France.

Buy good ingredients and ask customers what they like.

Lasagna! Beef is the standard, but chicken lasagna is delicious, as it a veggie lasagna with leek and mushroom bechamel and roasted seasonal veg through the tomato sauce!

Whats your favourite dessert? Tiramisu is the obvious one after a lasagna, but I can make whatever you like!!

If your still keen for dessert I would usually propose ice cream and sorbets after a big curry, but we could do something interesting like a cardamom creme brulee perhaps?
