We had the most incredible dining experience with Chef Valeria last night. From start to finish, everything was beyond our expectations. I requested a tasting menu style dinner and she came up with a 6-course dinner with mocktail pairings (we don’t drink so I had noted in my proposal we’d like a cocktail pairing (no alcohol) if possible) and Valeria was the only chef who went out of her way to bring in a mixologist, Juan, to create a unique cocktail experience for us without alcohol. Each course came with a perfectly paired mocktail, and Juan not only crafted amazing drinks but also assisted with service in such a professional and thoughtful way. The food itself was outstanding. We started with fresh oysters served with three styles of mignonette (Asian, Mexican, and classic), followed by a sashimi tostada that was packed with flavor and ended up being our favorite course of the night. Next came a Baja shrimp taco, then Almohadas (catch of the day with poblano chilies, cherry tomato, onions, and cilantro wrapped in a banana leaf). She even sourced tortillas from a local woman in town—the only one who makes them—which made it feel so special. Dessert was a rich, decadent chocolate creation to celebrate my husband’s birthday, and it was the perfect ending to the meal. The entire evening felt so personal and thoughtfully curated. Every detail—from the food, to the drinks, to the service—was executed flawlessly. They even washed all of the dishes used by hand and didn’t an excellent clean up. We highly recommend Chef Valeria and Juan for anyone looking for an unforgettable dining experience! P
