A gastronomia é uma forma de preservação e criação de cultura
PT: Natural de Setúbal, sou um cozinheiro formado na Escola de Hotelaria e Turismo de Lisboa com 17 anos de experiência, pelo que conto com conhecimento considerável na área da hotelaria e restauração.
Desempenhei função de Chefe Executivo no Wyndham Grand Algarve, na Quinta do Lago. Fui responsável pelo departamento de cozinha desenvolvendo menus, fichas técnicas, cálculos de custo, encomenda de matéria-prima, pondo em prática os procedimentos de higiene e segurança e tendo a meu encargo uma equipa de cerca de 15 cozinheiros. Produzíamos para pequenos almoços, bar da piscina e restaurante à la carte, bem como para vários grupos, particularmente para equipas profissionais de futebol.
Anteriormente, de 2014 a 2018, trabalhei como Chef particular do Sr. Embaixador do Reino dos Países Baixos, em Lisboa. Não só cozinhava para o Sr. Embaixador e toda a sua família como fazia almoços e jantares oficiais com convidados diplomatas, ministros e empreendedores. Fazia desde refeições empratadas até buffets, refeições volantes e cocktails. Era responsável pela elaboração dos menus, aquisição das matérias-primas, confecção, empratamento e organização de toda a cozinha.
De 2012 a 2014 tive o prazer de fazer parte de A Taberna da Rua das Flores, em Lisboa. Neste local, sob a influência do respeitado gastrónomo, jornalista e professor André Magalhães, tive a oportunidade de desenvolver uma cozinha sem fronteiras com uma forte componente antropológica e cultural. Desde o mais puro e esquecido tradicional português até ao mais experimental e vanguardista, com influências dos cinco continentes.
Realizei ainda alguns eventos como refeições temáticas e workshops. Destes destaco três aniversários do Teatro Maria Matos em Lisboa, com refeições temáticas em Live Cooking abertos ao público. Fui responsável, em conjunto com dois grandes Chefs e amigos, pela organização, aquisição de matéria-prima e confecção, sempre em interação com os convidados.
Actualmente, procuro partilhar aquilo que de melhor adquiri ao longo desta viagem, oferecendo-lhe uma experiência gastronómica memorável.
EN: Born in Setúbal, I am a chef graduated from EHTL with 17 years of experience, having so a considerable knowledge in the hotel and restaurant industry.
I worked as Executive Chef at Wyndham Grand Algarve in Quinta do Lago. I was responsible for the kitchen department, developing menus, technical sheets, cost calculations, ordering products, implementing hygiene and safety procedures and leading a team of about 15 cooks. We produced for breakfast, pool bar and à la carte restaurant, as well as for various groups, particularly for professional football teams.
Previously, from 2014 to 2018, I worked as Private Chef for the Ambassador of the Kingdom of the Netherlands, in Lisbon. I was responsible for cooking for Mr. Ambassador and his entire family as well as for official lunches and dinners with invited diplomats, ministers and entrepreneurs. I served from plated meals to buffets, fly-bys and cocktails. I was responsible for preparing the menus, purchasing products, cooking, plating and organizing the entire kitchen.
From 2012 to 2014 I had the pleasure of being part of A Taberna da Rua das Flores, in Lisbon. In this place, under the influence of the respected gastronomer, journalist and professor André Magalhães, I had the opportunity to develop a cuisine without borders with a strong anthropological and cultural component. From the purest and most forgotten traditional Portuguese to the most experimental and avant-garde with influences from the five continents.
I also held some events like themed meals and workshops. Of these, I highlight three anniversaries of the Maria Matos Theater in Lisbon, with themed meals in Live Cooking open to the public. I was responsible, together with two great Chefs and friends, for the organization, acquisition of products and preparation, always in interaction with the guests.
Nowadays, I try to share the best that I have acquired during this journey, offering you a memorable gastronomic experience.

We had the most incredible evening for my Mums 60th Birthday topped off with incredible food and a very professional service.
The food was delicious and we couldn't have wished for more. The tidy up service was also brilliant, and made for an even more relaxing meal when we came through to a spotless kitchen.

Manuel cooked for our adult family of 8 and everyone absolutely loved his food as well as his service and personality. The fish was the best we had ever eaten. He was very careful and amazing with handling dietary restrictions, he made incredible vegetarian food by special request for one of our family members. He set the table beautifully and cleaned up well. We would 10/10 recommend Manuel to other family’s, he was fantastic!
