My name is Riccardo Ulivelli, and I am an experienced Executive Chef with a passion for culinary innovation and teamwork. Since beginning my career in 2009, I have had the privilege of working in Michelin-starred restaurants, luxury hotels, bistros, catering, and event venues, gaining expertise in technical, classical, and modern cooking methods, as well as European and international cuisines.
I began my journey with a professional chef course, which sparked my love for the kitchen and motivated me to seek out invaluable training opportunities. Under the mentorship of Chef Marco Stabile at Ora D’Aria in Florence and Chef Paolo Lopriore at Il Canto in Siena—both Michelin-star establishments—I honed my craft, mastered various kitchen sections, and embraced the artistry of high-level cuisine. Along the way, I expanded my horizons by working in London, Madrid, and Mexico, gaining firsthand insights into how culinary traditions around the world shape unique approaches to food preparation and presentation.
My career has been defined by leadership excellence, a team-oriented mindset, and a dedication to delivering exceptional dining experiences. I am proud of my ability to lead by example, cultivate a calm and professional workplace, and foster collaboration across kitchen teams, FOH staff, and management. I believe that open communication and mutual respect are the foundations of success, enabling every team member to thrive and work towards shared goals. My customer-centric approach ensures that every detail—from menu creation to service execution—is tailored to exceed expectations.
In addition to my culinary expertise, I am deeply committed to sustainability, minimizing waste by utilizing all parts of ingredients, and implementing eco-conscious practices. My operational skills include inventory management, budgeting, cost control, and menu profitability, all aimed at driving efficiency without compromising quality.
