Chef Alejandro Rojas

Alex is a private chef based in Mexico City. Born in the 80s, he belongs to a generation that came of age between the traditional and the contemporary, developing a particular sensitivity toward food as lived experience and cultural language.

From a young age, he devoted himself to observing and tasting the local flavors: the kind born in the street, in the markets, in the Central de Abastos, and in the city's neighborhoods. There, between the urban and the barrial, he built an authentic perspective on Mexican cuisine — one that would later find academic grounding at the Escuela Nacional de Antropología e Historia, where he studied food not merely as nutrition, but as a symbolic system: a social act that defines identities, carries traditions, and preserves collective memory.

That formation gave him the tools to articulate what he had always sensed: that a mole is not just a recipe, but a living archive of history; that a market is not just a place to shop, but a space where traditions are negotiated; that cooking is, at its core, a political act of cultural preservation.
