Food, to me, is an adventure. There are no limits when it comes to combining and creating flavors!
My earliest memory of my passion to cook and feed people, was when I was 8 years old, I has created a a Tri-Colored Rice dish reflecting the colors of the Indian Flag, for a dinner for an important Chinese Business Partner of my dad's. I used Spinach puree for the Green, Carrot juice for the Orange and Blue Potatoes to mimic the Ashoka Chakra on the flag. The white (rice) of the flag was flavored with a mixture of whole spices like Cumin, Mace, Black Cardamom and Cinnamon. I worked all day to make this dish and I was so proud of my efforts and creativity. Dinner time rolled around and I excitedly starting walking towards the dining room, with the dish in my hand, smiling from ear to ear. As I approached the dining table, eager eyes on me, I tripped and dropped my mom's favorite ceramic dish. The glass shattered into a million piece, along with my heart. The colors of the Indian flag painted the marble floor and I wept so hard I could barely breath!
But in the end, the joy of having created this dish all by myself, was stronger than the disappointment of no one having a taste of it.
I've created ever since. Cooking is my therapy and zen. Standing at my mother’s knee, I learnt to smell spices and flavors and concoct combinations in my head. She taught me to how to translate my love for creating, into beautifully balanced and flavored dishes. And today, with no formal culinary training, it is that very the enthusiasm that defines my passion.
Recently won a James Beard Foundation award for Women in Culinary Leadership and I manage a restaurant in Chicago. I create unique tasting menus for supper clubs, popup dining experiences and private events, across the Chicagoland area. My food is inspired by a variety of spices and I love combining traditional Indian flavors with more contemporary techniques and world cuisines, to create a unique explosion of taste for my diners.
