Get to know me better

French and Italian trained South African Chef

I studied at the Food & Beverage Institute in South Africa. I had the great opportunity of working for Chef Nicolas van der Walt, owner of the FBI School of Pastry where I learned everything from baking bread to creating wedding cakes. I was able to complete my studies at the Ritz-Carlton in Naples, FL, before heading back to South Africa. It was in Cape Town where I worked with Chef Gabriele le Roux, at Peppenero Restaurant, before helping him open the Pepper Club Hotel. In 2012, I started with Crystal Cruises (Symphony) as Chef de Partie and worked my way up to SR Sous Chef. After 2 years, on board the Symphony, I moved to Vail, CO, where I worked for Master Chef Daniel Joly, owner of Mirabelle Restaurant in Beaver Creek. I then went on to work with Chef Nick Haley, owner of Zino Ristorante in Edwards, before joining the Four Seasons as Sous Chef. One year later I was promoted to Chef de Cuisine at the Four Seasons, Las Colinas, where I ran four separate outlets including LAW Restaurant, OutLAW Bar, Lobby Lounge and In Room Dining.
