Married 22 yrs with 2 rescued poodles. My approach to preparing food is very flexible & founded on "French Nouvelle" or basically purity of content & flavor. It has been so since my career began. I am skilled in multiple cuisines including Italian, French, Polish, Fusion, and Regional American. I have opened 10 different style restaurants as chef . I have deep experience in pastries, baking, fine dining, crisis management & teaching/training. Experienced in kitchen design, restaurant construction & remodeling, menu development, staff training, food preparation presentations, recipe creation, I cover the entire northern Illinois area including southern Wisconsin and northwestern Indiana. My sessions are fun, casual, very informative with a flexible approach to understanding food preparation.. I have appeared on network TV over 600 times plus hundreds of printed articles and photos locally and nationally in newspapers & magazines. Locally I have given dozens of live radio interviews & over a thousand classes conducted. I retired as #5 ranked pro freestyle jet skier on LXF Tour. I operate a globally respected Ebay store which sells miniature toy soldiers. Both my Ebay store 1/72 Legions in Plastic Depot and FreeCookingPrograms.com were started in 2004.. My involvement with worthy charities spans decades and many social & environmental concerns.. I have supported in the moment on numerous occasions law enforcement, 1st res-ponders and all military branches. I have been at most every major food event in Chicago including Taste of Chicago, The Flower & Garden Show, Taste of Polonia, Great American Cooking Expo & National Restaurant Association Show. I was rated in the top 4% of professional chefs in North America by my peers in 2000. I have written 1 cookbook, produced 2 DVD's and posted over 200 articles to WordPress & LinkedIn. Wrote the cookbook Hearty & Healthy Polish Cooking.
