My love for the kitchen began at just 12 years old, cooking in his aunt’s restaurant where he quickly discovered that food was not just a job but a calling. Now with 20 years of experience across Ireland, the UK, New York, Sydney and Melbourne, I has built a career defined by passion, versatility and a deep respect for ingredients. I thrive on the ever-changing rhythm of the kitchen, embracing the fact that no two days are ever the same. While I enjoy cooking across a wide range of cuisines, my favourite style is shared dining, believing it is the most generous and joyful way to eat, bringing people together over vibrant, flavour-driven dishes. For me, creating an exceptional dining experience goes beyond the plate. I believes a great chef must truly love the food they prepare and ensure every guest feels special, inspired and eager to return for more.

I learned a lot from my grandmother and went to work with my aunt who is also a chef at a very young age. You could never get me out of the kitchen.
