Cooking and providing to friends family & public is an absolute delight, To produce flavoursome satisfying dishes for people and knowing they love it.
I am a qualified experienced passionate chef ., with many years of experience in various restaurants and cafes .
I also love entertaining in my home for friends and family. Normally going all out with course after course travelling through the flavours of the Middle East which is my favourite. Closely followed by northern India, & not to mention ancient Italy & Greece.
Over my 30 years in the industry I have owned and operated two successful cafes ,
Worked at top Italian restaurants in Brisbane that are still today open and successful.
Some of my chef training was at flamboyant French restaurants in the capital Wellington New Zealand. Home of cuisine as well.
This particular restaurant/ bistro followed classic French methods with modern expressions sometimes very artfully out there , cutting edge back in 1994 .
Though still keeping the menu hearty and not to “fluffy”
The location of my first cafe was in the northern rivers NSW , just north of Byron Bay 2005
My second Cafe was on the south side Brisbane in a semi industrial area at this time 2015.
We took on a lease , renovated and opened modestly. Within two years we had established a very busy hub.
Fresh flavoursome food from the heart and an honest priced menu.
This cafe was built on relationship’s & fresh produce.

Throughout my experience in this demanding but so rewarding industry, I am very experienced front of house as well .
Actually I moved out of the kitchen for ten years to pursue front of house service , sommelier ect
Looking after the guests from aperitif through courses & wines to match , on through to dolce / desserts, amaros & espresso.
U name it I’ve completed extensively front of house professionalism.
I enjoyed wonderful experiences front of house over that period, though I must say the last Ten years I’m cooking again and feeling great and inspired.
Food & making the magic from selected produce and choices of flavours is a life time journey .
