With a rich background ranging from operating his own award-winning gastro pubs in South Oxfordshire and Henley on Thames to training under the renowned Antonio Carluccio in Italy, Mark brings a wealth of experience to every culinary creation. He graduated from the Italian Culinary Institute for Foreigners in Costigliole d'Asti, Italy, which honed his skills in both traditional and modern cooking techniques. Mark's signature "Lamb Tasting" dish, designed for sharing, showcases his mastery of technique and his dedication to celebrating whole-animal cooking.
