I don’t cook menus - I build experiences. Fine dining, Georgian cuisine, Japanese, Italian, molecular. For any occasion, any location in Spain.
I am Mariami Gugunashvili-Brand Chef,culinary event director,and the kind of chef who makes your guests cancel their plans just to stay at the table a little longer.
I grew up in Georgia-a country where food is not a meal, it is a ceremony.Where a table is never just a table,it is an act of love.That is where my obsession started. Over the past 10 years I have built my career across Europe and Asia-luxury hotels, golf clubs, fine dining restaurants, resort kitchens, high-volume catering operations.From Tbilisi Marriott to Tbilisi Hills Golf Club-where I spent two years cooking for some of the most demanding and refined guests imaginable-to chef positions in Asia ,luxury resorts in Georgia,and fine dining in the Baltic.
For the last three years I was based in Tallinn-cold, elegant, precise.It gave me discipline,a Nordic eye for detail,and the hunger for something bigger.I needed fire. I needed colour,chaos, joy,and people who live out loud.So I came to Spain. And I brought everything with me.
My cuisine is a journey on a plate. One dinner might take you from a delicate Japanese-inspired crudo kissed with yuzu, through a Georgian lamb slow-cooked in pomegranate and herbs, to a French-technique dessert that makes the table go completely silent. I cook Georgian soul, French precision, Italian generosity, Japanese restraint, Mediterranean sunshine-and anything else you desire.You dream it,I build it.
From an intimate dinner for two on a rooftop at sunset, to a wedding feast for 200 with theatrical live stations, to a full catering operation that runs like clockwork - I do it all, with a dedicated team including a second chef, at the same uncompromising level every single time.
