My international experience refined my technique and broadened my perspective, but it also deepened my appreciation for the simplicity and character of true Roman cuisine.
With a strong knowledge of local ingredients, seasonal products, and the cultural history behind each dish, I am passionate about preserving the essence of traditional recipes while presenting them with care and precision. From handmade pasta to time-honored Roman classics, every menu reflects respect for tradition and quality.
